Italian pesto sandwich
*makes 6-8 sandwiches
Ingredients:
- One loaf Italian bread
- 2-4oz fresh pesto
- 4-8 oz prosciutto
- 8oz fresh mozzarella or burrata
- 1 tomato, sliced, if desired
A few notes on making this:
- My kids love this sandwich any time of year, but it’s especially perfect in the summer when it’s too hot to cook, or for a perfect beach/pool day lunch.
- This sandwich is endlessly riffable—add any meats or veg that you’d like.
- This can also be toasted in a panini press for a warm version.
Directions:
- Cut the Italian loaf in half lengthwise.
- Spread pesto evenly over the top and bottom halves.
- Next, add slices of prosciutto evenly across bottom half.
- Add slices of mozzarella or burrata on top of prosciutto.
- Then, add tomato slices on top of the cheese, if using.
- Finally, place top half of bread on sandwich and press gently.
- Cut into 6-8 slices.
- If you have a panini press, you can press for a few minutes to warm sandwich and melt cheese, if desired.
- Enjoy!
